With a careful winemaking process and proper aging, wines can last several years after it is released and continue to develop to the point of perfection. At Turiya, I keep a small amount of older vintage wines in the library to help with the assessment of the lifespan of the wine. This purposeful extended aging allows me to continue to bottle age these wines, tasting them during the process, and making valuable notes for future vintages. Malbec, one of the 'lost' Bordeaux's, that regained popularity when the great country of Argentina decided to embrace it's glory. Filled with layers of character, and myself being of Argentinian decent, I couldn't pass up the chance to give this a grape a go. I wanted to produce a Central Coast Malbec that is both food friendly, yet voluptuous. Sticking to my early pick standard, I gained the balance of acidity I desired and with extended aging in the barrel the dark fruit flavors came through. To my Argentinian ancestors - Salude!
